I’ve decided the best thing to do with leftover roast chicken is…. stuff it into pizza dough with bacon, onions, and some Caesar dressing and make chicken bakes! Okay, there are lots of other things you can do. But chicken bakes are easy and portable and filling. And they remind me of the absolute perfection that is Costco’s chicken bakes. (more…)
Oh man, the last few weeks have flown by! I could’ve sworn it’s only been a week and a half or so since perfecting the s’mores brownies (btw, make the entire graham cracker crust. Trust me.) Spring has gone by so fast! I can hardly believe summer’s just around the corner. If the only the weather got the memo… although it IS supposed to warm up later this week. Although I enjoy a fancy, pretty, photogenic meal once in a while, what makes me feel at home is a warm bowl of yum that can feed a bunch of people. Its even better when you can make it all in one pot- those are the best!
I love reading. Its one of my most favorite things to do and I’ve even been to walk aimlessly around my house with my nose in a book. Its not the most productive way to be, but sometimes, its really hard to put. the. book. down.
As 2014 counts down its last few sunrises, I am happy to end the year with a savory kick. Every time I make chili mac (a recipe for another day), I end up with most of a 28-oz can of crushed tomatoes that I never know what to do with. Which means it ends up likely frozen or left in the fridge and forgotten about. Eek, waste!
