What I love about summer is the chance to eat lovely, light, fresh food, especially as I’m not a salad-person. I generally crave hearty pastas or stews or dishes that make me feel cozy on the inside. But since I started kickboxing this summer, I’ve really started craving lighter meals.
Answer: delicious Vietnamese-inspired summer rolls.
I’ve decided the best thing to do with leftover roast chicken is…. stuff it into pizza dough with bacon, onions, and some Caesar dressing and make chicken bakes! Okay, there are lots of other things you can do. But chicken bakes are easy and portable and filling. And they remind me of the absolute perfection that is Costco’s chicken bakes. (more…)
I can’t believe it’s already December. I know I say this every time the season turns, but the past few months have really flown by! It’s nice to look forward to a lot of baking this year after nearly killing the turkey on Thanksgiving. BTW, Alton Brown’s turkey is so good that even accidentally forgetting to reduce the heat (from 500 to 350) for the last 1.5 hours didn’t completely burn the bird. The foil blanket also helped. It was really good in congee that night and pot pie the next day. (more…)
Everyone loves a baked potato, right? The perfect lazy side if you have an hour to spare. You can add anything on them and they’re perfect as a meal unto themselves. I read on Tasting Table that lots of chefs will bake off a few potatoes at the end of the night rather than pull together a full meal. The way they add flavor to it is to bake it encrusted in salt. Oh man, the last few weeks have flown by! I could’ve sworn it’s only been a week and a half or so since perfecting the s’mores brownies (btw, make the entire graham cracker crust. Trust me.) Summer is shaping up to be a season of busy. It has been a beautiful week of plentiful sunshine, cool breezes, and lots of work! Planning for my Europe trip next month is one big thing I’ve been busy with. That’s right- I’ll be taking my first international trip to Europe! The first part of the trip is with my grad school advisor and her study abroad history of psychology class. I did a little preliminary research for the program years ago and she’s invited me along to see the fruits of my labor. I’m really excited to see some of these hallmarks of psychology I’ve only read about in textbooks and articles (and seeing my passport look more worldly). (more…)
Spring has gone by so fast! I can hardly believe summer’s just around the corner. If the only the weather got the memo… although it IS supposed to warm up later this week. I seriously rocked a maxi dress and sandals last Thursday evening only to shiver in an oversized sweater and jeans on Friday. What is going on?! (more…)
One of spring’s best gifts is asparagus. Those yummy green stalks may appear to be available all year round, but you and I both know that they are the best and most tender in the springtime. Just eating them is like tasting spring in your mouth. (more…)
I’ll admit, I was pretty (read: very) late to the red velvet wagon. It seemed like a dessert that couldn’t make it up its flavor-mind and hid its indecision behind a lot of food coloring. I thought I saw through that. Who wants a confused cupcake anyway? Then two years ago, a friend was throwing a surprise birthday party for his then-girlfriend and I offered to make cupcakes for dessert. Guess what her favorite cake flavor was? That’s right. (more…)
